I love kale. I really and truly do. Kale chips, sauteed kale, kale in soup, raw kale, you name it. I love me some kale.
I have a fairly stressful job that often has me flying by the seat of my pants and running all over the county. I try my best to be good and frugal by making sure I bring my own lunch most days, but as we all know about the best-laid plans, that doesn’t always happen. Sometimes there’s no time to stop or there’s no food left in the fridge and no time to shop or, you know. Sometimes I just plain don’t feel like making something.
Fortunately, there are several grocery stores around here that offer a decent hot bar selection. I can feel a little better about this than many other possible lunch options, bc most of it is pretty healthy. At New Leaf Community Markets, my favorite to get as of late has been the coastal kale salad. It’s a simple blend of raw kale, wheat-free tamari or Bragg’s liquid aminos, sunflower seeds, olive oil, lemon juice and a few other things. Apparently it’s a store favorite. It’s tasty, filling and healthy and provides me with a good alternative when bringing my own lunch just isn’t happening.
