Bk and I have a cute little Rangpur lime tree growing in a pot on our balcony. With the lovely weather we’ve been having, the little fruits are ripening like crazy. Usually we just use them in cocktails like we would regular limes, but I haven’t been able to use them quickly enough. I decided to try my hand at making marmalade. A little searching on google quickly turned up a recipe for small batch rangpur lime marmalade. It was remarkably easy and fairly quick, not counting the six hours you have to let it sit before adding sugar to the fruit and water mixture. I ended up with two decent-sized jars. Yum!
