Dinner for one: gluten-free roasted sweet potato gnocchi and sparkling wine

I spotted Nuovo gluten-free roasted sweet potato gnocchi the other day at Whole Foods and decided to give it a whirl. The $4.99 package in the refrigerated section promised “two restaurant portions,” but let’s be honest – it was just one meal for me.

Normally I would have made a sage-brown butter sauce to go with it but I didn’t have sage. I ended up just doing a simple white wine, garlic and butter sauce. And, seeing as it was Valentine’s Day, I used it as an excuse (as if I need one) to drink a bottle of cava (the Spanish version of champagne, basically) with it

It was….okay. To be honest, I was a little underwhelmed. It wasn’t bad, but it wasn’t great. An ex partner used to make me gnocchi from time to time and it definitely was a lot better than the Nuovo brand. I’ll probably just try my hand at it next time I want gnocchi, but I’d also be willing to give the two other Nuovo varieties — plain potato and basil — a shot sometime. 
Later I met my friend Heather and her boyfriend out at Beat Kitchen where I ate the most delicious vegetarian nachos ever. Along with black beans, cheese and salsa, these babies featured loads of sauteed yellow squash, zucchini, onions and other veggies. So good.
