Sarah had recently made a trip to Trader Joe’s and stocked up on gluten-free goodies for me, much to my great joy.
She ended up making a chicken roulade, stuffed with spinach, mushrooms, walnuts, leeks and dried cherries. She breaded it a little with some Orgran brand rice bread crumbs. We also had fingerling potatoes and roasted brussels sprouts, which I forgot to take a picture of.
We drank festively red sparkling cranberry juice. For dessert, a Trader Joe’s flourless chocolate cake with vanilla ice cream. We followed it all off with a good dose of the Winter Olympics.
Of course I ate way too much…
